When I was growing up, a Champurrado on a cool day was a favorite treat. What I remember was a slightly spicy hot chocolate with notes of cinnamon and cayenne... and corn. This is my nod to that memory.
One of our first varieties... and still one of the most popular. Never too spicy, but certainly not mild. We use a very hot cayenne, but very little of it. You get a hint of the heat, without overpowering everything else.
